Healthy Weekly Menus

Plan for Week 1:

I try healthy recipes and let you know if they are tasty, and I modify delicious recipes to align with our Mediterranean way of eating. These recipes can also be found in a post on my Facebook page through this link Facebook, with pictures and commentary about the finished dishes.

We are focusing on eating more vegetables, particularly more greens, and more seafood, while limiting red meat to only every couple of weeks. Our menu planning approach – 2-3 Seafood dishes, 2-3 Vegetarian Dishes, 2-3 Poultry dishes/week.

Hawaiian Shrimp Sheet Pan – Sheet-Pan Shrimp, Pineapple & Peppers with Rice

Air-Fryer Cod, Green Beans, French Fries – Air Fryer Fish Fillet Recipe – Crispy & Crunchy – I’m using a recipe from littlesunnykitchen.com for the fish.

For the green beans, I will use @WholeFoods organic, frozen french-style green beans. French fries will be potato wedges that we soak for a couple of hours, then dry them, coat in olive oil, season with salt, pepper and rosemary, then cooked in the air fryer.

Buffalo cauliflower Tacos, Refried beans, and a salad made with cherry tomatoes, black beans, red onions, and corn

For the Buffalo cauli – I simply oven roast chunks of cauli in olive oil, then toss in a bowl of ‘wing sauce’. We serve these with dollops of greek yogurt and avocado slices in corn tortillas that are slightly blackened in a hot iron skillet with no oils.
