The goal of this blog is to help others who are struggling with over-eating and preparation of healthy meals by sharing how easy it is to follow a Mediterranean Diet, but first let me explain why this is so important for me to share with all of you!

Before changing to a Mediterranean Diet, I was in downward spiral with my weight and health. I was 100 pounds overweight and my A1C had reached the level of 7.0, and I was becoming diabetic. So, my doctor prescribed medication to improve my A1C (metformin), but my weight continued to creep up at a rate of 1-2 pounds per month.

There were three main issues with my diet that were causing the weight gain:
1) I was frequently eating unhealthy food.
2) I was hungry all the time.
3) My food portions were too large.

Sound familiar?

I made the decision to change my life and begin eating in a way that would nourish and care for my body, instead of just satisfying my palate. However, I learned that I could do both and in an economical way.

After two years, I am down 65 pounds, my A1C is now at 5.7, and I feel great!

For many people, this might sound like very slow progress. However, I have done this all through diet and I’m just now adding in the exercise component that will further improve my health.

In summary, instead of gaining 1-2 pounds/month – I started losing 1-3 pounds per month because my portion sizes are under control and I’m following the Mediterranean diet most of the time to nourish my body.

I hope that my personal health journey will be inspiring to you and that the meal plans and food preparation tips that I share will be helpful.

You can do this! I didn’t think it was possible for me…and I made the change! I am still not at my target weight as I still have 40 pounds to go but trust me my friends…if I can do this, then you can too!
